Easy Enchiladas

I have another beef enchilada recipe that is more involved that has homemade sauce and uses a variety of spices BUT sometimes I just want easy. These enchiladas are easy and are something you can get on the table quickly. Also, they are good to cook ahead of time because they reheat nicely.
